Build up recommendations

I've got a GT LTS 3000 DS in good shape. It only needs wheels, with an 8 speed cassette to be ridable, but I'd like to upgrade the fork too. For the wheels, I was wanting something that is rim and disc brake compatible and not overly priced, but also not going to fall apart on me. For the fork, I've got no idea. I'm not looking for something crazy expensive, but something that is solid and can handle mostly cross country to some all mountain-ish riding. Thoughts?
