We take a big jar of the grocery store brand salsa, ad some garlic, cilantro and maybe more tomatoes. Pretty good, but who's got a real recipe?

Try this one Mauriceman. It's great spread over grilled chicken or fish.
1 whole mango (diced)
1/4 cup of red bell pepper (diced)
1/4 cup of red onion (diced)
1 teaspoon cilantro (minced)
1 teaspoon crushed chili flakes
2 tablespoons rice vinegar
Simply combine all ingredients together in a medium sized bowl and mix well. The salsa will last in the refrigerator for 48 hours.

Got this from a little old lady that worked in her families resturant in Sayulita Mexico,(south of Puerto Vallarta).
2-3 serano peppers, or 1 lg. jalapeno--diced
cilantro minced--as much as you like
2 tsps. salt
4-8 tomatoes--Romas work pretty well.
2-4 green onions-diced
1/4 -1/2 cup of lime juice-fresh is best
By the Book method--put peppers, cilatro, and salt in a mortar and grind them together with a pestel to make a paste. Add that with the rest of the ingredients in a bowl. If it comes out chunkier than you like, take the pestel to it and mash it up the big chunks.
Quick and Dirty method--chop, juice, dice and slice everything and throw it in a bowl--chow down.
Optional ingredients:fresh garlic, or fresh ginger--awesome, or pineapple, or mango-awesome, avocado--my favorite.
